R&R & Hoping All Is Well


Today was a kinda rough day at work, even by only 10am. So I decided to go and get my hair cut during my lunch break for a little relaxation time. As you can see from above, on my way back from a little R&R I passed right by what looks to be a horrible accident. I am only hoping that there was no one in the back seat of this car at the time of the accident! It has been a long time since I have seen an accident so bad, probably since the time that I flipped my SUV back about 3 years ago. Anyway, it was awesome to go and have some relax time in the middle of a hectic day, but now I can only wonder if everyone that was in this car made it out okay. Overall, the day got better after this. Free Italian lunch at work and a haircut that I love. I guess my day wasn't so bad after all.

Morning Apple Muffins


I have been having urges to bake and cook lately. I guess with the fact that Ryan is in school so late on Tuesday and Wednesday nights, meaning I cook dinner on those nights, I have really started to enjoy it. Today I decided to make Apple Cinnamon muffins from a recipe I found online. I think the recipe called for too much cinnamon, but they were pretty good overall. We'll see how long this cooking thing lasts.

Recipe: MugCake


So Ryan has started school again which leaves me home by myself a lot. Unfortunately, I cannot just sit back and rest like most would, I have to find little projects to do. I think it is part of me channeling Kate Gosselin. You know how she always comes up with these stupid little projects for her brood to do? Well I think I pulled tonight's project straight from her play book. If you can't tell from the picture, which I am 100% sure you can't, that is MugCake. Yes, you take cake ingredients, mix them together in a mug and microwave it for three minutes. The cake makes this tall column which I was sure was going to fall over and make a huge mess, but it really did sink back into the mug after the microwave went off. Overall, it didn't taste great, but it was way better than I ever imagined.

All you need ingredient wise is:
4 Tablespoons flour
9 Tablespoons hot chocolate mix
1 pinch of salt
1 egg
3 Tablespoons water
3 Tablespoons oil
Cooking Spray

Then all you do is:

1. Spray a little cooking spray into the mug.
2. Measure out the flour, hot chocolate mix and salt into the mug. Stir.
3. Crack the egg into the mug. Stir a bit after adding the egg so the cup doesn't overflow.
4. Add water and oil.
5. Stir until thoroughly moistened. Make sure to scrape the bottom of the mug with your spoon to avoid any leftover pockets of dry ingredients.
6. Put the mug in the microwave on high and set the timer for 3 minutes.

So although it may seem nuts, I am enjoying doing some crazy little projects like this one. I guess I may make a pretty good mom when it comes to keeping little ones busy. We'll see...

Agave Azul


Last night Ryan, my parents and I went to Agave Azul in Carrollton. This, by far has to be one of my favorite restaurants. The food is amazing, the atmosphere is great, and the service is pretty attentive. My favorite part is that it is more authentic Mexican food than most of the restaurants in the DFW metroplex. Agave Azul is most famously known for having an excellent Tequila bar, so you can't pass up having a margarita when you go there. Ryan always has a straight up agave margarita. My dad and I always have the vanilla margarita. Yum! Then there is my mom who has the frozen sangria margarita swirl. Kinda fruity looking, but I'm sure it tastes good. The best part is that they give out little pieces of chicle at the end of the meal. Inspired! I can't wait to go back again!

What A Busy Life

Life has seemed to be so much busier than usual for us lately. This week was the final week that we had a contractor in the house finishing up after the water damage. He was the tub refinisher and did an excellent job. The bad part of the week was since the tubs were wet from the work done, we couldn't stay in our home for two days while it dried. We spent both Monday and Tuesday night at Ryan's parent's home. It was so nice of them to allow us to stay there so that we didn't have to purchase a hotel room and they were such gracious hosts. I was very excited to get back to our finally finished home on Wednesday night, though!



Lately, work for me has been really intense. I feel like I am drowning under the work. Although this small stack of paperwork pictured above may not look that intense, each of those sheets takes between 5-10 minutes to process, so do the math. That is at least 17 hours of work. It seems like the more competent you are the more they just pile on the work. Don't get me wrong, I do like being considered competent enough to be trusted with a high work load, I am just tired. Hopefully the economy will turn around and we can bring some more money into the organization so that there will be relief for all the staff. One can only hope...

Tea With A Handle


So, Ryan ended up getting a 3.46 GPA in his summer semester classes. I was very proud of him as it was a really hard semester, so I told him I would take him anywhere he wanted for dinner. First he said he wanted to go see a movie and have dinner at Studio Movie Grill. I thought that sounded great, but he then remembered that the movie he wanted to see was just opening tonight so it would be very crowded. This made him change his mind. He second choice surprised me. He asked if we could go pick up some chicken and tea at Chicken Express. Having not been there since I was in college 5 years ago, I thought it sounded like a great idea. I guess, only having been there by myself or with a roommate, I had never ordered a jumbo drink. I had no idea that there was a drink you could order at any fast food restaurant that comes with a handle! The poor little carhop came out carrying this drink with two hands and then had to bring out the food on a second trip. Only in Texas...

Hot, Hot, Hot


It has been so hot in Texas lately that Ryan and I haven't been doing much of anything, plus Ryan has had a lot of homework. But today we went to the club with Laurel, hit a few balls on the driving range and then went swimming. It is weird because even though we have known each other for almost 4 years, we had never been swimming. All in all it was a fun day, even though it was so, so hot. We ended the day at our favorite Thai restaurant, Noodle Wave, with my Mom and Dad. A great end to a great Sunday!
